These wonderful balsamics are made in the traditional way, fermenting the must of trebbiano grapes in wooden barrels.
Produced in the attics of his home master balsamics producer Marino Tintorie, overlooks the chequer-board square of Castelvetro, near Modena. La Vecchia Dispensa produce the Ricco, which is an eight year vinegar, naturally thickened in Slovenian oak barrels. A dripping, not pouring, vinegar. Delicous, and decorative too.
The Cubica is a hugely popular 8 yr old everyday balsamic, it has great depth and balance.
The intense fig flavoured balsamic makes an ideal dressing for lamb cutlets.
